江正强博士,教授

1998 ~ 1999在日本神户大学农学部进修。2000 ~ 2001作为联合国大学研究员在日本食品综合研究所酶工程研究室进行合作研究。2005年~2006年在法国食品工业大学(南特)进行合作研究。2013年8月~10月在德国吕贝克大学进行合作研究。现担任中国农业工程学会农产品加工分会常务理事、北京市食品学会理事、《中国粮油学报》编委等。博士论文获“全国优秀百篇博士论文”;入选教育部“新世纪优秀人才”;荣获日本首届国际农业研究杰出青年科学家奖

研究方向:

  • 食品酶与发酵工程:新型食品酶基因的克隆和表达、酶制剂的发酵生产、纯化、性质和应用;新酶的结构解析及分子改造:如新型葡聚糖酶、酯酶、几丁质酶等。
  • 食品科学与工程方向:低聚糖的生产和功能、传统发酵食品和粮油加工食品等。
  • 其他:新资源食品、食用有机酸发酵及生物质资源高效利用等。

研究成果

为主要完成人获“玉米芯酶法制备低聚木糖”国家技术发明奖二等奖1项和山东省科学技术进步奖二等奖1项。鉴定科技成果3项,代表性成果:“极耐高温木聚糖酶研发与应用”,2005年9月通过教育部组织的专家鉴定,认为“达到国际领先水平”;“嗜热真菌耐热木聚糖酶高产菌株的选育、研发及应用”, 2005年9月通过教育部组织的专家鉴定,认为“达到国际先进水平”。获国家发明专利8项,申报发明专利6项,代表性授权发明专利“一种耐高温重组木聚糖酶及其编码该酶的基因”,专利号:ZL02156022.6;代表性公开发明专利“生产低聚木糖的方法及其专用固定化木聚糖酶”,专利号:ZL 200410046123.5。
